Crab 🦀 Potato 🥔 Cakes

I always believe in using Leftovers in future meals. Why throw away good food? Especially if you can create something tasty with an earlier meal.


With this dish I had leftover mashed potatoes and canned crab meat from crab stuffed salmon. Sorry for not posting that meal. I was hungry when I made it and didn't create any content.


The cakes were made as in any potato cake recipe. I just added the crab meat two tablespoons of sour cream and seasoned to taste with dill and old bay seasoning. Oh and I added a 1/4 cup of diced pimento. But you could add to your liking as well.


Add butter to a frying and melt. Form the crab and potato mixture into 2 inch diameter cakes. Add to the frying pan on medium heat. Cook on each side for a few minutes. Make sure a nice crust has form on the side that is frying before flipping over. Cook for a few minutes more and serve. I served as sides butter beans and broccoli 🥦 with a butter sauce.

I also used Margaret Holmes Butter Beans. Good old southern cooking! Lol!
